MEATBALLS
For meatballs:
2 eggs
2 tbsp. olive oil
2 tsp. oregano
2 tsp. kosher salt
1 tsp. black pepper
1 tbsp. red pepper flakes
1⁄2 cup grated Parmesan or Pecorino cheese
1⁄2 cup breadcrumbs
1 1⁄2 lbs. ground beef (85-95%)
For the sauce:
3-4 tbsp. olive oil
2-3 onions, finely chopped
5-6 cloves garlic, minced or pressed
2 tbsp. oregano, basil, Italian seasoning or combination there of
1 small can tomato paste 2 cups red wine
2 large cans crushed Roma or San Marzano tomatoes
1⁄4 cup sugar
2-3 tbsp. kosher salt
