OATMEAL FREEZER CUPS
INGREDIENTS
5 cups water
2 cups old-fashioned oats
1/3-2/3 cup brown sugar
1 tbsp. butter or dairy- free spread
1 tsp. cinnamon 1⁄2 cup raisins
1⁄2 cup dried cranberries
3⁄4 cup fresh or frozen blueberries
1 Bring water to a boil; add salt. Add oats and cook for 5 minutes, stirring occasionally.
2 Remove from heat. Stir in brown sugar, butter and cinnamon. Transfer to a glass bowl. Cover and let cool completely.
3 Stir in dried fruit.
4 Spoon the mixture into 12 lightly greased muffin tins. Add blueberries to the top of each cup, press them in lightly. Cover, if desired, and freeze overnight. Let stand 5 minutes, then transfer cups to freezer bags or containers.
5 To serve, microwave 1 cup in a bowl for about 2 minutes. Can stir in dairy-free or regular milk halfway through heating if desired.
Makes 6-12 servings.
