POLISH POTATO DUMPLINGS (KOPYTKA)
INGREDIENTS
2 cups mashed potatoes 1 large egg
2 cups flour
1 tbsp. olive oil
1 tbsp. butter
1 small onion, chopped
4 slices bacon, chopped
1 Place cold mashed potatoes in a bowl. Add egg and flour and mix until the dough comes together.
2 Place dough on a floured surface and divide into two parts. Roll one part of the dough into a log. Slice into 1 1⁄2-to-2-inch dumplings. Repeat with remaining dough.
3 In a large saucepan or pot, boil water and add 1 tsp. salt. Add 5 to 8 dumplings at a time and cook until they float to the top. Remove and place on plate. Repeat with remaining dumplings.
4 In a skillet, heat olive oil and butter. Fry onion and bacon. Add dumplings and cook until golden brown.
Serves 4.
