ELLEN’S
PUMPKIN BREAD

“This wonderful bread makes your kitchen smell delicious. It is the perfect recipe for church suppers, bake sales and pot lucks.” Ellen Baxter
PREPARATION
1. Preheat oven to 350°F. Oil 2 loaf pans.
2. In a large bowl, whisk together the eggs, pumpkin, water and oil. Sir in the lour, sugar, cinnamon, nutmeg, salt and baking soda, mixing unil just combined. (Do not overmix.)
3. Divide the bater among the pre- pared loaf pans. Bake for 1 hour and 25 minutes or unil the tops are brown and a toothpick inserted into the center of each loaf comes out clean.

Makes 2 loaves
4 large eggs 1 (15-ounce) can pumpkin 2/3 cup cold water 1 cup vegetable oil 3 1/4 cups all-purpose lour 3 cups granulated sugar 1 teaspoon ground cinnamon 1 teaspoon ground nutmeg 1 1/2 teaspoons salt 2 teaspoons baking soda
