PASSOVER
FRUIT SQUARES
MOSES FAMILY, BEACHWOOD, OH
INGREDIENTS
Makes approximately 24 squares
1 cup (8 tablespoons) butter or margarine
1 cup granulated sugar
2 cups matzo cake meal
2 large egg yolks
1 teaspoon vanilla extract
12 ounces strawberry jam, at room temperature
1 cup chopped walnuts 2 teaspoons lemon juice

ftfttttfPREPARATION 1. Preheat oven to 325°F. Oil a 9- by 13-inch baking pan.
2. In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar until light and fluffy. Beat in the matzo cake meal, yolks and vanilla until the batter is smooth. Scrape down the sides of the bowl with a rubber spatula.
3. Put 1 1/2 loosely packed cups of the mixture in a bowl and freeze. Press the remaining dough into the prepared baking pan and bake for 20 minutes.
4. While the baked layer is still hot, spread the jam across its surface. Sprinkle walnuts over the jam and drizzle with lemon juice. Crumble the frozen matzo over the top. Bake until golden brown on top, 25 to 35 minutes. Once cool, cut into squares.
