BARBECUED CHICKEN PIZZA
DOLE PACKAGED FOODS
INGREDIENTS
Serves 8
Chicken: 3 to 4 ounces boneless, skinless chick- en breasts halves 2 tablespoons barbecue sauce
Pizza: 1 cup (8 ounces) pizza sauce 1 (12-ounce) pizza crust 1 cup Dole Pineapple Chunks or Tid- bits, drained 1/3 cup roasted red pepper strips, drained 1/4 cup barbecue sauce 1 1/2 cups (6 ounces) shredded moz- zarella cheese 2 tablespoons chopped parsley
PREPARATION ttttt1. For each chicken breast, sandwich the chicken between plastic wrap. Pound chicken until flattened. Remove the plastic wrap and brush the tops of the chicken with 1 table- spoon barbecue sauce.
2. Heat a broiler or grill. Arrange chick- en on a broiler pan or place on the grill with the brushed side facing up. Broil or grill for 3 minutes. Flip the pieces over and brush with the remaining 1 tablespoon barbecue sauce. Broil or grill until cooked through, approximately 3 minutes. Cut into strips.
3. Preheat oven to 425°F. Oil a rimmed baking sheet.
4. Put the pizza on the baking sheet. Spoon pizza sauce across the crust. Top with chicken strips, pineap- ple and red pepper strips. Drizzle 1/4 cup barbecue sauce over the pizza and sprinkle with cheese and parsley.
5. Bake until the crust is golden brown, approximately 20 minutes.
