BEST EVER BUTTER COOKIES
LAND O’LAKES
INGREDIENTS
Makes 36 Cookies
Cookies: 1 cup (8 tablespoons) Land O’Lakes Butter, softened 1 cup granulated sugar 1 Land O’Lakes All-Natural Egg 2 tablespoons orange juice 1 tablespoon vanilla extract 2 1/2 cups all-purpose flour 1 teaspoon baking powder
Frosting: 3 cups confectioners’ sugar 1/3 cup Land O’Lakes Butter, softened 1 teaspoon vanilla or almond extract 1 to 2 tablespoons milk Food coloring (optional)
PREPARATION
1. To make the cookie dough: In the
bowl of an electric mixer fitted with the paddle attachment or with a hand-held electric beater, beat the butter, sugar and egg until creamy, scraping down the sides of the bowl with a rubber spatula as needed. Beat in the orange juice and vanilla. Add the flour and baking powder and mix on low speed until incorpo- rated.
2. Divide the dough into thirds. Shape each third into a ball and flatten slightly. Wrap each ball in plastic wrap and refrigerate until firm, 2 to 3 hours.
3. Preheat oven to 400°F. Have ready a few ungreased, rimmed baking sheets, a couple of cooling racks and a 3-inch round cookie cutter (or one of comparable size).
