CRANBERRY

INGREDIENTS Serves 6 to 8
1 apple, cored and chopped
1 (11-ounce) can mandarin segments, drained (or 1 orange, peeled and chopped)
1 (15-ounce) can crushed pineapple, drained
1 cup raisins 1 (12-ounce) package cranberries 1 cup apple juice 1 cup chopped walnuts
“Created by our good friend Sandy Sarber, this is a sugar-free Thanksgiving favorite for our whole family. We like to make extra because it’s a yummy snack on its own. Serve it warm or cold with turkey, peanut butter (instead of jelly) or as a topping on yogurt or ice cream.” Mike and Tessa David
tttttttPREPARATION 1. In a large saucepan, combine the apple, mandarin segments, pineap- ple, raisins, cranberries and apple juice.
2. Bring the saucepan to a boil, lower to a simmer and cook until the juice has evaporated and the mixture has thickened, 25-30 minutes. You will have about 5 cups. Stir in walnuts and let cool.
