LENTILS WITH
COCONUT

PREPARATION
1. Heat the olive oil in a large sauce- pan over medium-high heat. Add the onion and saute unil golden brown, 5 minutes.
2. Sir in the lenils, water, coconut milk, and bay leaf. Bring to a boil. Lower the heat and simmer, sirring occasionally, unil the lenils are tender, about 45 minutes. Discard the bay leaf. Season with salt and pepper.
INGREDIENTS
Serves 10
1 teaspoon olive oil
1 cup chopped onion
1 pound dried lenils, rinsed thoroughly
4 cups water 1 (13.5-ounce) can light coconut milk 1 bay leaf 1 teaspoon salt, or to taste 1/4 teaspoon ground black pepper,
or to taste
