PINEAPPLE
STUFFING
REMSTEIN FAMILY, HUNTINGTON STATION, NY
INGREDIENTS
Serves 6
4 large eggs 1 cup granulated sugar
1/2 cup (8 tablespoons) butter, softened
1 to 2 (16-ounce) cans crushed pineapple, drained
1 extra-small can crushed pineapple, drained (optional)
1 loaf stuffing bread, cubed

ttttPREPARATION 1. Preheat oven to 350°F. Butter a 9-
by 13-inch pan.
2. In a large bowl, beat the eggs. Stir in the sugar and butter. Fold in the pineapple, followed by the bread, ensuring the bread cubes are thor- oughly coated with the pineapple mixture.
3. Transfer to the prepared pan and bake until golden brown, 45 to 60 minutes.
