Taiwanese Fried Chicken

“This is a classic Taiwanese dish. It is famous worldwide. The secret ingredients that my mom added are plum powder and five-spice powder. They not only provide complexity to the smell, but also the tastes of sweet and spicy, which are a perfect match for soft drinks, beer and wine. INGREDIENTS
Serves 6 as an appetizer
Marinated Chicken:
1 medium head garlic, cloves peeled and minced
1⁄2-inch piece ginger, peeled and grated
3 green onions, white parts and 1 inch of green parts only, minced
4 tablespoons soy sauce
1 teaspoon curry powder
1⁄2 teaspoon ground cinnamon
1⁄2 teaspoon ground cumin
1⁄2 teaspoon ground nutmeg
1 teaspoon ground white pepper
1⁄4 teaspoon cayenne pepper
1 teaspoon sweet potato starch
1 teaspoon five-spice powder
1 teaspoon plum powder
1 1⁄2 pounds boneless chicken thighs, cut into 1-inch pieces
Coating:
1 large egg
1⁄2 cup cold water
2 to 3 cups sweet potato starch Vegetable oil, for frying
Salt
Ground white pepper
1 bunch Thai basil, stems re- moved
