Shrimp Chicken

INGREDIENTS PREPARATION
Serves 8 to 10
2 sleeves Town House crackers, crushed
1 (0.7-ounce) packet Good Seasons Italian dressing mix (dry)
2 teaspoons Bell’s seasoning
1⁄2 cup grated Parmesan cheese
1⁄2 cup (8 tablespoons) unsalted butter, melted
Mayonnaise
2 to 3 pounds boneless, skinless chicken breasts
1. Preheat oven to 350°F.
2. In a large bowl, stir together the crackers, Italian dress- ing mix, Bell’s seasoning, cheese and butter until well combined. Put mayonnaise in a separate bowl.
3. Pound the chicken breasts to an even thickness and cut into similar-sized strips. Coat the chicken strips with mayonnaise, then roll in the cracker mixture until well coated.
4. Roll each chicken strip into the shape of a pinwheel. Place in a 9- by 13-inch baking dish or on a large baking sheet. Bake until the crust is crispy and the chicken is cooked through, 30 to 40 minutes.
