Onolicious Corn Relish

INGREDIENTS
Serves 6
2 (11-ounce) cans whole kernel corn
1 cup chopped red onion, about 1⁄4-inch pieces
1 chopped red bell pepper, about 1⁄4-inch pieces
1 Japanese or English cucumber, seeded and chopped into 11⁄4-inch pieces 1⁄2 cup chopped jicama or Asian pear, about 1⁄4-inch pieces
1 to 11⁄2 cups Thai sweet chili sauce
Squeeze of fresh lime juice
Tortilla chips, for serving
PREPARATION
1. In a bowl, combine the corn, onion, bell pepper, cucumber, jicama, chili sauce and lime juice. Refrigerate 1 hour.
2. Serve with tortilla chips.
