Potato Kugel

INGREDIENTS
Serves 12
6 large eggs
1⁄2 cup canola oil
1⁄4 cup all-purpose flour
1 tablespoon salt
1 teaspoon ground black pepper 8 medium potatoes, peeled
2 yellow onions
PREPARATION
1. Preheat oven to 400°F. Grease a 9- by 13-inch baking dish.
2. In a large bowl, mix the eggs, oil, flour, salt and pepper together until smooth. Set aside.
3. Using the large holes of a box grater or a food processor fitted with the shredding disc, coarsely grate the potatoes and onions. Transfer to a colander and let stand 10 minutes. Squeeze out excess liquid and add to egg mixture. Mix until combined.
4. Pour the potato mixture into the prepared baking dish. Bake uncovered until golden brown on top and a knife inserted in the center of the kugel comes out clean, about 1 hour.
