5. Pour about 1⁄2 inch of oil into a skillet and heat over medium-high heat until the oil registers 350 degrees. Working a few chops at a time, cook until light golden brown on both sides.
6. Set the fried chops on a wire rack to drain, or on paper towels. Let the chops rest for a few minutes, then cut each chop into four or five strips. Serve with Japanese mustard, spicy mustard or soy sauce.
