Ingredients
Makes 36 to 42 cookies
1 cup (16 tablespoons) unsalted butter, softened
2⁄3 cup granulated sugar 2 large egg yolks
2 1⁄2 cups sifted all-purpose flour
1 teaspoon almond flavoring Colored sugar, for sprinkling

Preparation
1. Preheat oven to 350°F.
2. Place the butter and granulated sugar in a large bowl. Using a handheld mixer fitted with the beater attachment, beat until the mixture is creamy. Add the egg yolks and mix well. Add the flour and almond flavor- ing and mix well.
3. Transfer the dough to a cookie press and press out cookies onto an ungreased baking sheet. Sprinkle colored sugar over the dough.
4. Bake until the cookies are golden, 8 to 12 minutes.
5. Let cool on the baking sheet for a few minutes, then transfer the cookies to a wire rack to cool completely.
