Ingredients

FOR THE APPLE CAKE:
3 cups finely chopped peeled apples
2 cups granulated sugar
2 tablespoons ground cinnamon
1 teaspoon ground nutmeg 3 cups all-purpose flour 1 teaspoon baking soda 1 teaspoon salt 2 large eggs, beaten 1 cup vegetable oil 2 teaspoons vanilla extract
FOR THE BROWN SUGAR ICING:
1 1⁄4 cups packed light brown sugar
3⁄4 cup heavy cream
6 tablespoons unsalted butter
1⁄2 teaspoon vanilla extract
1 1⁄2 cups confectioners’ sugar, sifted

Preparation
1. Preheat oven to 350°F. Grease a 9- by 13-inch baking pan.
2. To make the apple cake, in a large bowl, toss together the apples, granulated sugar, cinnamon and nutmeg. In a medium bowl, sift together the flour, baking soda and salt. Add the flour mixture to the apples and stir until combined.
3. In another medium bowl, stir together the eggs, oil and vanilla. Add to the apple mixture and stir until blended (the batter will be thick). Transfer the batter to the prepared pan and spread evenly.
4. Bake until a toothpick inserted into the center of the cake comes out clean, 40 to 45 minutes.
