Apple Cake

Preparation
1. Preheat oven to 350°F. Grease an 8-inch square baking pan.
2. In a large bowl, stir together the apples, sugar, egg, melted butter, flour, salt, baking soda, cinnamon, allspice, nutmeg and walnuts (if desired) until blended. Transfer the batter to the prepared pan and spread evenly.
3. Bake until a toothpick inserted into the center of the cake comes out clean, about 50 minutes.
4. Let cool in the pan for 10 minutes, then serve.

Serves 12 to 16
2 large apples, peeled, cored and chopped
1 cup granulated sugar
1 large egg
1⁄2 cup (8 tablespoons) unsalted butter, melted
1 1⁄2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon 1⁄2 teaspoon ground allspice 1⁄2 teaspoon ground nutmeg
1⁄2 cup chopped walnuts (optional)
