Ingredients
Makes 24 to 36 bars
FOR THE CRUST:
2 cups all-purpose flour
1⁄2 cup packed light brown sugar
3⁄4 cup (12 tablespoons) cold unsalted butter, cut into pieces
FOR THE FILLING:
2 (8-ounce) packages cream cheese, softened
1⁄2 cup granulated sugar 1 teaspoon vanilla extract 2 large eggs
FOR THE TOPPING:
3 apples, such as Honeycrisp or Granny Smith, peeled and finely chopped
2 tablespoons granulated sugar
1⁄2 teaspoon ground cinnamon
1⁄4 teaspoon ground nutmeg

Apple Cheesecake Bars

“My two sons’ favorite dessert is apple crisp, and my two daughters love cheesecake,
so I created this dessert to keep everyone happy!” — Sue Regan
Preparation
1. Preheat oven to 350°F. Line a 9- by 13- inch baking pan with aluminum foil and grease the foil.
2. To make the crust, in a food processor, combine the flour, brown sugar and butter and process until crumbly. Press the mix- ture into the prepared pan and bake for 16 to 18 minutes. Keep the oven set at 350°F.
3. Meanwhile, make the filling: In the bowl of a stand mixer fitted with the flat beater, beat together the cream cheese and gran- ulated sugar for 2 minutes. Add the vanilla and beat for 20 seconds. Add the eggs 1 at a time and beat until incorporated. Spread the cream cheese mixture over the crust.
4. To make the topping, in a medium bowl, stir together the apples, granulated sugar, cinnamon and nutmeg. Sprinkle the apple mixture on top of the cheesecake.
