5. To make the streusel, in a food proces- sor, combine the flour, brown sugar, oats and butter and process until crumbly, then sprinkle over the apples.
6. Bake for 28 to 30 minutes. Let cool com- pletely in the pan.
7. Flip the cheesecake out of the pan onto a large cookie sheet, peel the foil off the crust and then flip onto a large cutting board. Cut into 24 to 36 squares. Refriger- ate until ready to serve.

3⁄4 cup all-purpose flour
3⁄4 cup packed light brown sugar
1⁄2 cup quick-cooking oats
2 tablespoons cold unsalted butter, cut into pieces
