Mud Pie

“Family meals at my sister’s house always end with mud pie. Mom’s homemade hot fudge sauce makes this extra special.”

Preparation
1. Preheat oven to 350°F.
2. To make the crust, in a food processor, combine the sugar, butter and chocolate wafer cookies and pulse until mixed. Press the mixture into the bottom and sides of a springform pan. Bake for 10 minutes. Trans- fer the pan to a wire rack and let cool.
3. To make the fudge sauce, in a saucepan over low heat, combine the butter and chocolate and heat, stirring occasional-
ly, until melted. Add the cocoa powder and sugar and cook, stirring often, for 5 minutes. Stir in the cream and vanilla and simmer until blended. Let cool.
4. Fill the cooled crust with the ice cream and top with the fudge sauce.

Serves 8
FOR THE CRUST:
2 tablespoons granulated sugar
6 tablespoons
unsalted butter, softened
1 (9-ounce) Box Famous Chocolate Wafer Cookies
FOR THE FUDGE SAUCE:
1⁄2 cup (8 tablespoons) unsalted butter
4 (1-ounce) squares Baker’s unsweetened chocolate
1⁄4 cup cocoa powder
1 1⁄2 cups granulated sugar 1 cup heavy cream
2 teaspoons vanilla extract
About 1⁄2 gallon vanilla or mocha chip ice cream
