Dara’s Grandma (Bubbe is Yiddish for grandma) made this special sweet and spicy honey cake for holiday dessert especially the Jewish New Year.
INGREDIENTS
3 cups sifted flour (works well with gluten free flour, too) 1 tsp. baking soda
1 tsp. baking powder
1 tsp. ginger
1 tsp. cinnamon
1 tsp. nutmeg, cloves OR allspice
1⁄2 tsp. salt
3 eggs
1 cup sugar
1 cup honey
1 cup cool black decaf coffee (or water) 2 tbsp. olive oil plus some to prep pans 2 tbsp. sweet red wine, optional
INSTRUCTIONS
1. Preheat oven to 350˚ F.
2. Sift flour with dry ingredients; set aside.
3. Beat eggs; add sugar, then honey, coffee/water and oil (plus wine if desired).
4. Add dry ingredients to egg mixture slowly in small scoops. Stir until well blended.
5. Pour into loaf pans that were prepped with a thin layer of olive oil. Makes 6 mini loaves (6 x 3 1⁄2 inches).
6. Bake in preheated oven for 30 minutes on center oven rack (may place tin foil on rack to prevent overflow into oven) or until toothpick inserted in center comes out clean.
