It’s not too sweet, the flavors and textures are interesting and different. The chocolate glaze adds just the right amount of thick sweet chocolate to the torte and makes it look really special and fancy. We live on Chestnut Ave, had wonder- ful chestnut dishes when we visited our son on his junior semester abroad, and so especially enjoy eating this torte on special occasions.
INGREDIENTS
Torte
1⁄4 cup - 1 cup of sugar (depending on desired sweetness you prefer) 1 cup milk
3 1⁄2 tbsp. unsalted butter
4 1⁄2 tbsp. cocoa powder
10 1⁄2 oz. (300 g) ground chestnuts
7 oz. (200 g) marzipan or almond paste
2 eggs, separated
2 tbsp. potato starch (or similar gluten free flour) 2 tsp. baking powder
Chocolate Glaze
3⁄4 cup semi-sweet chocolate chips 3 tbsp. unsalted butter
1 tbsp. light corn syrup or sugar
1⁄4 tsp. vanilla
1⁄4 tsp. orange liquor, orange essence, brandy or hazelnut liquor (optional)
