This is a traditional Indian dessert. It is supposed to be a favorite of Ganpati, the elephant-headed god of wisdom and prosperity. It is usually prepared on festive occasions across the country. We prepare it in our house both to mark special occasions like Birthdays as well as on not-so-special days when we are just craving a wholesome dessert.
INGREDIENTS
2 1⁄2 tbsp. full grain white rice
1 liter whole milk
Pinch of saffron
12-14 tbsp. sugar, depending on sweetness preference
4 tbsp. mixed nuts (almonds, pistachio, and cashew nut) 1 tbsp. raisins
INSTRUCTIONS
1. Wash the rice.
2. Cook the milk over medium-high heat in a heavy bottom pot, large enough to allow the milk to expand while boiling.
3. Add the washed rice to the milk and stir continuously. Once the milk boils, lower the heat. Let it simmer for about 30 minutes until the milk thickens and rice gets completely cooked. Keep stirring intermittently to prevent the milk from sticking to the bottom and burning.
4. Add the saffron to the milk.
5. Chop the nuts finely and roast in a separate pan.
6. Once the milk thickens, add sugar and further cook for 5 minutes. Then, add the nuts and the raisins. Switch off the burner and let it cool. The dish is usually served chilled but can
be enjoyed hot.
