This is Ethan’s grandmother’s recipe, an extended family staple, loved by all!
INGREDIENTS
2 cups flour
3⁄4 tsp. baking soda
2 tsp. baking powder
1⁄2 tsp. salt
1⁄4 cup milk
1 tbsp. apple cider vinegar 1 stick butter
1 1⁄2 cups over-ripe bananas 2 eggs
1 tsp. vanilla
1 1⁄2 cup sugar
1 cup ground pecans
INSTRUCTIONS
1. Preheat oven to 350˚ F..
2. Combine the flour, baking soda, baking powder, and salt in one bowl.
3. In a separate bowl, combine the milk and apple cider vinegar.
4. In a third bowl, whip the butter; add bananas, eggs and sugar, lightly beating to incorporate each and then add vanilla and lightly beat. Then add the milk mixture. Keep machine running while adding remaining dry ingredients. Fold in ground pecans.
5. Grease two standard size bread pans. Divide batter between bread pans and place in preheated oven for 45 minutes. Lower oven temperature to 315˚ F and bake for 15 minutes or until toothpick comes out clean.
