This recipe is so versatile we use often! It makes a quick, easy side dish, but diced chicken can be added to this dish to turn it into a main meal.
INGREDIENTS
1 cup gluten-free or regular orzo
1 1⁄2 cups chopped broccoli florets
1⁄4 cup shredded cheddar cheese
2 tbsp. grated Parmesan cheese
1 tbsp. butter
1⁄4-1⁄2 cup of milk (either 2% or whole) Salt
INSTRUCTIONS
1. Add orzo to a large pot of salted boiling water.
2. Cook for 3 minutes, then add chopped broccoli and cook for 2 more minutes, or until orzo is tender.
3. Drain well (broccoli florets hold onto a lot of water) and return to the pot.
4. Add cheese, butter, and 1⁄4 cup of milk, then stir well. Add more milk if needed.
5. Season with salt to taste.
