This is my son’s all-time favorite dinner and he asks for it whenever he comes home from school. It›s quick and easy, too.
INGREDIENTS
1 lb. ziti or shells cooked according to package
1-1 1⁄2 lb. herb chicken sausage removed from casing (or sliced) 8-10 oz. cream cheese (full or low fat)
1 medium onion sliced (optional)
8 oz. sliced mushrooms (optional)
2 tbsp. olive oil
1⁄4 cup - 1⁄2 cup Parmesan cheese
Handful of chopped parsley
INSTRUCTIONS
1. While cooking pasta, add oil to a large sauté pan. Once oil is hot, add onions and/or mushrooms (if using) to caramelize.
2. Crumble in sausage (or sausage slices) and cook until browned.
Add cream cheese stirring until melted, remove from heat until pasta is ready.
3. If you like the sauce thinner, add in a little water from the cooked pasta to desired consistency.
4. Drain cooked pasta and add into cream cheese/sausage mixture.
5. Stir and top with Parmesan cheese and parsley.
