YANNONI | STOW, MA | SERVES 4-6
A quick and easy recipe that is so full of flavor!
INGREDIENTS
1 sweet red pepper, cut into bite-sized pieces
1 sweet green pepper, cut into bite-sized pieces
1 tbsp. butter or olive oil
1 cup onions, finely chopped
2 large garlic cloves, minced
6-8 Italian sausages, sliced (hot or sweet, or both) 1 cup rice
1⁄2 cup frozen corn
2 1⁄2 cups beef stock
1⁄3 cup fresh parsley, chopped
1 tsp. fresh marjoram, chopped
Salt and pepper to taste
INSTRUCTIONS
1. In small pot, cook rice according to directions, using 2 cups beef stock.
2. In large heavy skillet, melt butter over medium heat. Cook onions and garlic, stirring occasionally, for about 4 minutes or until softened.
3. Add sliced sausage to pan. Cook for 6 to 8 minutes or until meat is no longer pink.
4. Add parsley, marjoram, salt and pepper. Add 1⁄2 cup stock and deglaze pan. Add corn and peppers.
5. Reduce heat to low. Simmer for about 10 minutes.
6. Combine rice with sausage mixture and serve. Enjoy!
