We have lemon trees in our front and back yard and try to use lemons whenever we can. Making lemonade juice out of lemons is an expression typically heard in our home. This dish reminds our family of our back-East sojourns when we are down home out West.
INGREDIENTS
1 cup panko
1⁄2 cup chopped celery
1 egg beaten
1⁄3 cup mayonnaise
2 tbsp. lemon juice
Dash each of salt, pepper, turmeric, red pepper and curry 1 lb. crab meat, drained and flaked into small pieces
2 tbsp. margarine
INSTRUCTIONS
1. Mix 1⁄2 cup panko and other ingredients, and fold gently into the crab meat
2. Place remaining 1⁄2 cup panko in shallow pan. Divide mixture into small balls.
3. Coat in panko and shape into thin round patties.
4. Fry in nonstick pan over medium heat, about 4 minutes on each side until lightly brown.
