One of the Booth household’s favorite sayings is “If some cheese is good,
more is better.” This recipe is definitely inspired by this philosophy! It was originally developed when Abby decided to avoid meat several years ago and represented a meal even the family meat-eaters could enjoy.
INGREDIENTS
1 cup part skim ricotta cheese
2 eggs
2-3 cloves garlic, finely chopped 1⁄2 tsp. dried parsley
1⁄2 lb. mozzarella cheese, grated
3 tbsp. freshly grated Parmesan cheese
1-1⁄2 cups Italian seasoned bread crumbs(e.g. 4C brand) 1⁄2 cup milk
1 large eggplant
1⁄4 cup olive oil
1-1⁄2 cups marinara sauce (Rao’s, Bertolli, homemade) Cheesy Garlic Bread:
Crusty French bread (a typical baguette – 12-16 inches) Finely chopped garlic (3-4 cloves, depending on taste) Extra virgin olive oil (2 tbsp.)
Butter, warmed to room temperature (2 tbsp)
Freshly grated Parmesan (1⁄4 cup)
Grated mozzarella (1 cup)
Dried parsley (2 tsp.)
