INSTRUCTIONS
1. Preheat oven to 400˚ F.
2. Mix together the ricotta, one egg, half the garlic, parsley, and a small handful the grated mozzarella in a small bowl. Fluff the mixture with a fork.
3. Mix 1 tablespoon Parmesan with bread crumbs on a large plate.
4. Whisk together one egg and milk in a large bowl.
5. Wash and dry the eggplant and slice into 3⁄8– 1⁄2” thick slices (do not peel). Discard ends.
6. Lightly coat one or two cookie sheets with olive oil.
7. Dip eggplant slices into egg wash, allowing excess to drip off, then immediately dredge in the bread crumb mixture. Press the eggplant into the bread crumbs to ensure complete coating.
8. Place the breaded eggplant on the cookie sheet(s). Drizzle the tops with olive oil (a Misto sprayer is perfect).
9. Bake on center rack for approximately 10 minutes; check bottom of eggplant and turn slices over when golden brown. Bake another 10 minutes, checking for golden brown color on both sides. Remove when done, keeping oven at 400˚ F.
10. Lightly coat a 4-quart casserole dish with olive oil.
11. Assemble one layer of eggplant on bottom of dish (don’t put sauce in first). Cut up slices to fill in voids.
12. Spread enough marinara sauce over the eggplant to cover it completely. Sprinkle some of the chopped garlic and Parmesan over the sauce.
13. Drop dollops of the ricotta mixture over the sauce.
14. Sprinkle a layer of the grated mozzarella over the ricotta.
15. Repeat steps 11-14 until all of the eggplant has been used. Sprinkle the top with some extra mozzarella to cover; grate more if needed.
16. Bake uncovered until the mozzarella is partly browned and bubbly, approximately 25 minutes.
17. Allow to cool for about 5 minutes, then cut and serve with cheesy garlic bread (recipe below).
18. Use the oven, still heated to 400˚ F.
19. Slice bread lengthwise down the center, fold open. Drizzle open face of bread with EVOO, then butter open face of bread and sprinkle generously with garlic, Parmesan, mozzarella, and parsley.
20. Place on cookie sheet and bake on center rack until cheese is lightly browned. Slice and serve.
