GRANDMA’S ZUCCHINI BREAD
INGREDIENTS
3 eggs
1 cup sugar
1 cup vegetable oil
2 cups shredded zucchini
2 small apples, peeled and grated
1 tsp. vanilla
3 cups flour
1 tbsp. cinnamon
1⁄2 tsp, nutmeg
1⁄4 tsp. ground cloves
1 tsp. salt
1 tsp. baking powder
2 tsp. baking soda
1 cup raisins
1⁄2 cup chopped walnuts (optional)
1 Grease 2 loaf pans.
2 In large bowl, beat together eggs, sugar and oil.
3 Add zucchini, apple and vanilla. Mix well by hand.
4 Add flour, cinnamon, nutmeg, cloves, salt, baking powder and baking soda. Mix well.
5 Add raisins and nuts; mix again.
6 Pour into loaf pans.
Bake at 325°F for 60 to 75 minutes.
