HOMEMADE PIEROGIES WITH PLUMS
INGREDIENTS
1 cup water
1 cup all-purpose flour
Pinch salt
1 egg (optional)
Dried plums or any dried fruit of your choice
2 tbsp. vegetable oil
1 Boil water. In a bowl, add flour, making a small well in the center. Pour water into well, then add salt and egg.
2 Knead dough with hands, ensuring all flour clumps are incorporated into the dough. If dough is too thick, add more water.
3 Once dough is ready, roll it out thin. Sprinkle the top with flour to prevent dough from sticking to itself.
4 Cut 4-inch circles out of the dough and set aside.
5 Take 1-2 pieces of dried fruit and place into the middle of a dough circle. Fold the dough together to enclose the fruit, then pinch the ends. Gently press a fork on the ends to seal.
6 Gently coat each pierogi with oil. Boil until dough rises to the top of the water.
