“Crepes are a classic French staple and one of my absolute favorite recipes. They are so simple but so much can be added to them.”

INGREDIENTS
2 cups all-purpose flour, sifted
Pinch salt
4 large eggs
1⁄4 cup butter, melted
1 tbsp. sugar (optional)
2 cups milk
2 tbsp. oil, for cooking
FRENCH CREPES
1 Add flour and salt to large bowl and make a well in the center.
2 Add eggs, butter and sugar, if desired. Whisk vigorously, starting from the center. Slowly add milk, mixing as you pour, to keep the batter smooth. Once all the milk has been added, cover the bowl and let sit for 2 hours.
3 Heat a 6-inch crepes pan and grease with oil, using a paper towel. Ladle a small amount of batter, tilting the pan to distribute the dough well.
4 Heat until the surface is cooked, then flip the pancake and cook the other surface for about a minute, or until the crepe becomes lightly blonde. Cook remaining crepes in the same manner.
5 Stack crepes onto a plate and serve with your favorite toppings (The French like butter and sugar, jam, or melted chocolate.)
