PENNE PASTA WITH GREAT NORTHERN BEANS
INGREDIENTS
2 cups chopped scallions
1 cup chopped curly parsley
2 cloves garlic, thickly sliced
2 tbsp. olive oil
16 oz. cooked penne pasta
1 1⁄2 cup cooked Great Northern beans (2 cans, rinsed, or dried beans,
soaked overnight, then boiled in water for 90 minutes and drained)
1⁄2 cup boiled water from the cooked pasta or dried beans
9 oz. fresh spinach
2 cups grated extra sharp cheddar cheese or smoked cheddar cheese
1 Saute scallions, parsley and garlic in olive oil in a large frying pan.
2 Add pasta and beans, mix well. Cover and cook on medium heat for 5 minutes.
3 Add the boiled water and spinach. Cover and cook for 5 minutes on medium heat.
4 Spoon into bowls and sprinkle cheese over the pasta.
Serves 4-6.
