APPLESAUCE OATMEAL BREAD
INGREDIENTS
For bread:
1 1⁄4 cup flour
3⁄4 cup sugar
1 tsp. baking soda
1 tsp. baking powder
1⁄2 tsp. cinnamon
1⁄4 tsp. nutmeg
1 cup uncooked oatmeal 1 apple, peeled and sliced 2 eggs
1 1⁄4 cup applesauce
1/3 cup oil
1⁄4 cup milk
For topping:
2 tbsp. brown sugar 2 tbsp. pecans
1⁄4 tsp. cinnamon
1 In a large bowl, mix all dry ingredients together.
2 In a small bowl, beat eggs, applesauce, oil and milk. Add to dry ingredients and mix well.
3 Grease a loaf pan. Pour batter into pan.
4 Mix ingredients for the topping. Crumble over the top of the batter.
5 Bake at 350°F for 1 hour.
Note: You can substitute 1⁄4 cup whole wheat flour for 1⁄4 cup of the white flour, and use all natural applesauce.
