“This cookie is easy to make and so much fun. Cindy likes to make them rabbit-shaped. I made this cookie for a special event featuring peanuts in Berkshire Dining, and Ken Toong, our executive director, loved it because it reminded him of home.” HENDRO KUSUMO
ASIAN PEANUT COOKIES
INGREDIENTS
2 cups all-purpose flour
2 cups roasted peanuts, minced (Make sure peanuts still have peanut texture and have not become peanut butter)
1 cup granulated sugar
1 cup + 1 tbsp. canola oil, divided
Pinch salt 3 egg yolks
1 Heat oven to 350°F.
2 Combine flour, peanuts, sugar,
1 cup oil and salt until well mixed.
3 Combine egg yolks with 1 tbsp. oil to make an egg wash.
4 Shape dough into 1 oz. shapes, such as a ball or anything that your children like. Place on a baking sheet lined with parchment paper.
5 Bake 15-20 minutes.
