BLUEBERRY OATMEAL MUFFINS
INGREDIENTS
1 1⁄4 cup quick-cooking oats
1 cup all-purpose flour 1/3 cup white sugar
1 tbsp. baking powder 1⁄2 tsp. salt
1 cup milk
1⁄4 cup vegetable oil 1 egg
1 cup blueberries, washed, rinsed and drained
1 Combine all dry ingredients. Mix in milk, egg and oil just until dry ingredients are moistened. Fold in blueberries.
2 Fill greased muffin tins 2/3 full with batter. Bake at 400°F for 20 minutes.
