BLUEBERRY BLISS COFFEE CAKE
INGREDIENTS
1 cup sour cream 1 tsp. baking soda
1⁄2 cup unsalted butter, softened
1 cup sugar
2 large eggs
1 tsp. vanilla extract
2 cups all-purpose flour 1 tsp. baking powder
1⁄4 tsp. salt
1 cup fresh blueberries 1⁄2 cup brown sugar
1 tsp. cinnamon
1 Heat oven to 350°F. Grease and flour 5 a 9-inch springform pan.
2 In a small bowl, mix sour cream and baking soda. Set aside.
3 In a large bowl, cream together butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla.
4 Combine flour, baking powder and salt. Stir into the creamed mixture alternately with the sour cream mixture until just blended. Fold in blueberries.
Pour half the batter into prepared pan. Mix brown sugar and cinnamon together and sprinkle half of the mixture over the batter. Spoon remaining batter over top, then sprinkle with remaining sugar-cinnamon mixture.

6 Bake 55-60 minutes, or until toothpick inserted in center comes out clean. Allow to cool before removing from pan.
