Gluten-Free and Dairy-Free Chocolate Chunk Cookies

“Ever since some of us in our family had to go gluten-free and dairy-free, finding options for sweets became difficult. Since I was a baker by profession, I created a cookie for the girls so that they could enjoy a good old-fashioned chocolate chip cookie. UMass
is excellent in providing gluten-free and dairy-free options. Now, here is another option they may like to try! These cookies are great and satisfying and alter really well . . . try with nuts or dried fruits for different options.”

INGREDIENTS
Makes about 30 large cookies or 48 regular-sized cookies
3 1⁄4 cups gluten-free flour
1 cup ground gluten-free whole oats
1 teaspoon baking powder
1 teaspoon baking soda
1 cup vegan butter (Earth Balance)
1⁄2 cup coconut oil (not melted)
3⁄4 cup packed light brown sugar
1⁄2 cup packed dark brown sugar
1 1⁄4 cups granulated sugar 2 large eggs
1 tablespoon vanilla extract
18 ounces mixed chocolate chips, such as Enjoy Life Dairy Free Chunks and Guittard Dark Chocolate Chips
