Fried Mozzarella Sticks

“Ever since we figured out how good homemade fried mozzarella sticks are, as compared to the frozen store-bought variety, my daughter Emily insists that we have them whenever she comes home.” JONATHAN SMALL
INGREDIENTS
Serves 8
8 ounces mozzarella cheese
1⁄3 cup all-purpose flour
1⁄4 cup grated Parmesan cheese
1 large egg, beaten with 1 1⁄2 teaspoons water
1⁄2 cup panko
Light olive oil (not extra-virgin olive oil), for frying Marinara sauce, for dipping
PREPARATION
1. Cut the cheese into 8 (31⁄2 - by 1⁄2-inch) sticks.
2. In a bowl, mix the flour and Parmesan cheese together. Place the egg in a second bowl. Place the panko in a third bowl.
3. Dredge each mozzarella stick lightly in the flour mixture, shaking off the excess. Working one cheese stick at a time, dip in the beaten egg until completely coated, then roll in panko. For a more ample crust, dip the sticks a second time in the egg, followed by the panko.
4. Transfer the coated sticks to a plate and freeze for at least 15 minutes.
5. Pour the oil into a large frying pan to a depth of 1⁄2 inch and heat to 365°F. Working in batches, fry the cheese sticks until golden brown, about
1 minute per side. Transfer the fried cheese to plates. Serve with warmed marinara sauce.
