Guacamole

INGREDIENTS
Serves 6
3 Hass avocados, halved and pitted Juice of 1 lime
1⁄4 teaspoon salt
1⁄4 teaspoon ground cumin
1⁄4 teaspoon cayenne pepper
1⁄2 red onion, diced
2 Roma tomatoes, diced
1 tablespoon chopped fresh cilantro 1 garlic clove, minced
Cut-up vegetables or tortilla chips
PREPARATION
1. Scoop the avocado pulp from the skin and transfer to a large bowl. Add the lime juice and toss to coat. Drain the lime juice into another bowl.
2. Add the salt, cumin and cayenne to the avocados and use a potato masher to mash. Fold in the onion, tomatoes, cilantro and garlic. Add 1 tablespoon of the reserved lime juice.
3. Let sit at room temperature for 1 hour. Serve with vegetables or tortilla chips.
