Everybody’s Favorite Egg Casserole

“This is a recipe by Jonah Ogburn’s grandma and has been passed around to friends and family. We never try new quiche recipes because people LOVE this one and begin making it after trying it.” CORRI OGBURN
INGREDIENTS
Serves 12
12 large eggs
1 pound Monterey Jack cheese, shredded
1⁄2 cup all-purpose flour
1 teaspoon baking powder
1⁄2 teaspoon salt
1⁄2 cup (8 tablespoons) salted butter, melted (preferably Kerry Gold) 1 (16-ounce) carton cottage cheese
1 small can diced green chiles
Salsa, for serving
PREPARATION
1. Preheat oven to 350°F. Lightly grease a 9- by 13-inch baking dish.
2. In a large bowl, beat the eggs. Add the cheese, flour, baking powder, salt, butter, cottage cheese and chiles and stir to combine. Pour the mixture into the prepared pan and cover with foil.
3. Bake for 45 minutes. Uncover and continue baking for 10 minutes more. Serve with salsa (see Kristin’s Authentic New Mexican Salsa page 11). Also pairs well with fruit salad and sweet bread.
