This recipe is a favorite among the UMass Men’s Rowing team and coaching staff. But only after ALL the racing for the day is done.
INGREDIENTS
Brownies
1 package family size brownie mix 1⁄2 cup vegetable oil
1⁄4 cup water
2 eggs
1⁄2 cup chocolate chips
Glaze
1 cup chocolate chips
1 tbsp. vegetable oil Chopped walnuts - optional
INSTRUCTIONS
Filling
1⁄2 cup butter – softened 1⁄2 cup brown sugar
1⁄4 cup granulated sugar 2 tbsp. milk
1 tsp. vanilla 1 cup flour

1. Preheat oven to 350˚ F. Grease bottom only of 13 x 9 pan.
2. In a large bowl, combine brownie mix, oil, water and eggs.
3. Beat approximately 50 strokes with a spoon. Stir in chocolate chips.
4. Spread into greased pan.
5. Bake for 28 - 30 minutes. Cool completely.
6. In a large bowl, combine butter, brown sugar and sugar. Beat until light and fluffy.
7. Add milk and vanilla and blend well.
8. Add flour and mix well.
9. Spoon filling over cooled brownies and then use an offset spatula (or flat knife) to carefully spread the filling to cover the brownies (you can also do it with wax paper or with wet fingers.)
10. In a small microwaveable bowl, combine the chocolate chips and vegetable oil.
11. Microwave on medium for 1-2 minutes until melted. Stir until smooth.
12. Spoon/drizzle glaze over filling and spread.
13. Sprinkle with chopped walnuts (if desired).
14. Refrigerate for 30 minutes. Cut into small bars.
15. Store in the refrigerator until serving.
