We found this simple recipe when searching for a dairy-free alternative to birthday cakes for a lactose intolerant family member. These are the moistest, richest, fudgiest, dairy-free brownies you’ll ever bake!
INGREDIENTS
2⁄3 cup cocoa
1 1⁄2 cups granulated sugar
1⁄2 cup confectioners› sugar
3⁄4 tsp. salt
1 cup unbleached all-purpose flour
1⁄2 cup vegetable oil
2 tbsp. water
3 large eggs
1 cup walnuts, diced (optional)
1 cup dairy-free chocolate chips (optional-we use Enjoy Life brand)
INSTRUCTIONS
1. Preheat the oven to 350˚ F. Lightly grease an 8 x 8 (brownies will be thicker) or 9 x 9 square pan.
2. In a large mixing bowl, combine the cocoa, sugars, salt, flour, nuts, and chips.
3. Add the oil, water, and eggs, mixing until combined.
4. Spread the mixture into the baking pan.
5. Bake the brownies for 33 to 35 minutes for the 9” pan, or 40 to 45 minutes for the 8” pan (note: a pan with a dark interior will bake the brownies more quickly). Test for doneness by inserting a sharp knife or toothpick in the center. If it comes out clean, they’re done.
6. Remove the brownies from the oven, and cool a bit before cutting. Enjoy!
