This recipe is one of our two long-time comfy and healthy favorites!
Fresh apples from local orchards make our favorite healthy cookies extra tasty!
INGREDIENTS
1 1⁄4 cups whole grain flour or all-purpose flour 1⁄2 tsp. baking soda
1⁄2 tsp. baking powder
1⁄2 tsp. sea salt (iodized preferred)
1⁄2 tsp. cinnamon
4 tbsp. unsalted butter (room temperature) 1⁄4 cup cane sugar
1⁄2 tsp. dark brown sugar
1 egg
1 tsp. vanilla extract
1⁄2 cup applesauce
1⁄2 cup diced apples
1 1⁄4 cups oats
3⁄4 cup cinnamon chips
Pinch of nutmeg
Pinch of allspice
INSTRUCTIONS
1. Preheat oven to 350˚ F.
2. In a large bowl, add the flour, baking soda, baking powder, salt, nutmeg, allspice, and cinnamon. Whisk ingredients.
3. Combine the butter and sugars in the bowl and mix together until smooth. Add egg and vanilla. Mix.
4. Add in the diced apples and applesauce. Mix.
5. Stir in the oats and cinnamon chips.
6. Form the cookie mix into small round balls and place on large baking sheet with parchment or silicone baking sheet, 2” apart.
7. Place on middle rack of oven and bake for 10-12 minutes.
8. Remove and allow cookies to cool. Enjoy!
