Our family loves to have muffins (corn, banana, zucchini, pumpkin, etc.) on the weekends as a quick breakfast or snack as well as we all have different schedules.
INGREDIENTS
1 cup cornmeal
1 cup flour
1⁄4 cup sugar
4 tsp. baking powder 3⁄4 tsp. salt
1 cup soy milk
1⁄4 cup canola oil
1⁄2 to 3⁄4 cup corn kernels or diced red pepper (optional)
INSTRUCTIONS
1. Preheat oven to 420˚ F.
2. Mix first 5 ingredients.
3. Add milk, oil and optional ingredients (if you choose) and mix until smooth,
4. Pour batter into 8 inch baking dish which has been greased with cooking spray; bake for 22-25 minutes. Cool 10 minutes.
5. Place on wire rack to cool another 5-10 minutes.
