“This is one of the easiest Russian salads that we always make for holidays, especially New Year.”

INGREDIENTS

6 medium potatoes, peeled
1 large carrot (or more, to taste)
3-4 hard-boiled eggs
6 large pickles, cut into cubes
1 15 oz. can peas, drained
1⁄2 cup fully cooked ham, or to taste
1 tbsp. chopped fresh dill, or to taste (optional)
1⁄2 cup mayonnaise, or to taste

Bring a large pot of water to a boil. 3 Add potatoes, return to boil and
cook for 5-10 minutes. Add carrots
and continue cooking until potatoes
are tender, 10-15 minutes. Drain and allow vegetables to cool slightly.
Chop potatoes and carrots into small cubes. Peel and chop eggs.
Mix potatoes, carrots, eggs, pickles, peas, ham and dill together in a large bowl. Stir in mayonnaise until salad is evenly coated.
Serves 8-10.
