TROPICAL CHICKEN SALAD
INGREDIENTS
2 lb. boneless, skinless chicken breast
1⁄2 cup nonfat yogurt
1⁄2 cup lowfat mayonnaise 1⁄2 cup sour cream
1 cup chopped celery
1 cup red seedless grapes
1 cup cashews or macadamia nuts
1 cup pineapple chunks 1 cup mandarin oranges
1 Poach chicken until cooked. Cut into small pieces.
2 In large bowl, combine yogurt, mayonnaise and sour cream.
3 Add remaining ingredients. Add more dressing if too dry. Serve on your choice of bread.
