TURKEY CHILI
INGREDIENTS
2 tsp. olive oil
3 cloves garlic, minced
1 onion, chopped
1 pack mushrooms, sliced
1 orange bell pepper, chopped
2 lb. ground turkey
1 tbsp. brown sugar
2 tbsp. chili powder
1⁄2 tsp. salt, plus more to taste
Pepper, to taste
1⁄2 tsp. ginger
1 can crushed tomatoes
1 1⁄2 cans diced tomatoes
1 cup chicken broth
1 can kidney beans
1 can pinto beans (southwest, with jalapeño)
1 can chili-ready white beans
Avocado (optional, for garnish)
Cheese (optional, for garnish)
Green onions (optional, for garnish)
Sour cream (optional, for garnish)
1 Heat oil in large pot over medium high heat. Add onion, garlic, mushrooms and pepper. Sauté for 5-7 minutes, stirring frequently.
2 Add turkey and break up the meat. Cook until meat is no longer pink.
3 Add chili powder, salt, pepper, brown sugar and ginger. Cook, stirring, for 20 seconds.
4 Add tomatoes, broth and beans. Bring to a boil, then reduce heat and simmer for 30-45 minutes until chili thickens and flavors come together. Taste and adjust seasons if necessary. Garnish with anything you like.
